How We Make Them

It starts with fresh pineapple, blended and slow-cooked gently for hours until the natural sugars caramelise and the jam reaches its perfect point. Deep golden, fragrant, and never too sweet. Once ready, the jam is cooled and rolled by hand, individually, for every single tart.

The pastry is made fresh for each batch. Real butter, worked by hand, rolled out and cut piece by piece. Each tart is filled, egg washed by hand, and baked until just golden.

There are no shortcuts. There is no other way to do it.
