How is it different from the classic pineapple tarts?

The pineapple jam is exactly the same, slow-cooked for hours from fresh pineapple, made the way we make our classic pineapple tarts. The difference is all in the pastry.

We work coconut oil into the all-butter pastry, along with desiccated coconut that we toast first to bring out a warm, coconutty flavour rather than a sweet, artificial one. A little more toasted coconut goes over the jam before the second bake. 

Is the coconut strong?

No. It is a subtle note underneath, not the main event. The pineapple still leads, exactly as it does in our classic. If you love our original tarts, these will taste familiar with something extra rather than like a different tart altogether.
